Quick Comfort: Homemade Tomato Soup(zuppa di pomodoro)

Here in Italy, there is a plethora of pomodoro, but most people use it to make sauce. No canned tomato soup here! So I developed this recipe which comes together in just 30 minutes. All you need are some basic panty ingredients + a stick blender and you are ready to go! Grilled cheese pairing optional :)

Ingredients

  • Two Tablespoons olive oil

  • One medium onion, chopped

  • One shallot, chopped

  • One large or two small carrots, peeled and chopped

  • One clove garlic, stem removed

  • One bouillon cube (vegetable, kub or or chicken work fine!) or a Tablespoon of Vegeta

  • 700ml/3 Cups of strained tomato (I like Pomi or Mutti)

  • One cup of water

  • Two tablespoons of sour cream or heavy cream (optional)

Directions

In a small pot, add the olive oil, onion, shallot carrot and garlic. Heat over medium heat covered for about 3-5 minutes. Stir and let the vegetables soften. After another 3-5 minutes add the strained tomato, bouillon cube and water and simmer for 15 minutes, stirring occasionally. The vegetables should be soft by now. Allow the soup to cool for about 5 minutes before using the stick blender (or a regular blender), and then blend until smooth. If using cream, add now and simmer for 3 minutes. Done!
