Quick Comfort: Homemade Tomato Soup(zuppa di pomodoro)
Here in Italy, there is a plethora of pomodoro, but most people use it to make sauce. No canned tomato soup here! So I developed this recipe which comes together in just 30 minutes. All you need are some basic panty ingredients + a stick blender and you are ready to go! Grilled cheese pairing optional :)
Ingredients
Two Tablespoons olive oil
One medium onion, chopped
One shallot, chopped
One large or two small carrots, peeled and chopped
One clove garlic, stem removed
One bouillon cube (vegetable, kub or or chicken work fine!) or a Tablespoon of Vegeta
700ml/3 Cups of strained tomato (I like Pomi or Mutti)
One cup of water
Two tablespoons of sour cream or heavy cream (optional)
Directions
In a small pot, add the olive oil, onion, shallot carrot and garlic. Heat over medium heat covered for about 3-5 minutes. Stir and let the vegetables soften. After another 3-5 minutes add the strained tomato, bouillon cube and water and simmer for 15 minutes, stirring occasionally. The vegetables should be soft by now. Allow the soup to cool for about 5 minutes before using the stick blender (or a regular blender), and then blend until smooth. If using cream, add now and simmer for 3 minutes. Done!
