Quick Cuisine: Green Bean and Mushroom Stir Fry

Green bean season is here! So when I feel like making an easy side dish or a quick dinner, this comes together quickly. I recommend fresh or frozen green beans, the canned are a bit squishy for this recipe (save it for a green bean casserole!) Enjoy.

Ingredients

  • Two Tablespoons olive oil

  • One shallot, chopped

  • One garlic clove, chopped in half, stem removed

  • 250 grams/One Cup green beans, cleaned and chopped

  • 250 grams/One cup button mushrooms, cleaned and chopped

  • One-Two Tablespoons red wine vinegar

  • salt + pepper to season

Directions

In a pan large enough to saute and cover, bring the olive oil and chopped shallot to medium heat. Sweat it out for 3-4 minutes and once they run clear, add the mushrooms and garlic and stir. Cover and let the mushrooms sweat for 3 minutes. Once the size of the mushrooms reduce, uncover and add the green beans and toss through. Let the liquid reduce to almost dry, then deglaze the pan with the red wine vinegar. Once the green beans are bright green and crisp, you are ready to season with salt and pepper. I like them crisp, but if you have people that want them a bit more cooked, you do you) Serve immediately.
