Quick Cuisine: Gluten Free Peanut Butter Cookies
Itβs a chilly end to February and so I found a great excuse to fire up the oven and make cookies. These peanut butter cookies are quick and easy. Enjoy!
Ingredients
1 cup/250 grams Peanut Butter (You can use natural kind or Jif/Skippy, it will just be a sweeter cookie)
1/2 cup/100 grams of white sugar
1/2 teaspoon baking powder/baking soda
1/4 cup/25 grams of almond or oatmeal flour (you can use regular flour, but the recipe will not be gluten free!)
1 egg, beaten
1/2 teaspoon vanilla extract (completely optional!)
Directions
Preheat the oven to 180C/350F. Mix everything in a bowl until smooth. On a parchment paper lined cookie sheet(parchment will make your life easier), place a tablespoon of dough and make a crosshatch pattern with a fork dipped in water. Some say this changes the taste of the cookie, I just think they look better!
Bake for 8-12 minutes depending on your oven. They will not get very brown, but they will be crumbly when first out of the oven. Cool for at least 5 minutes and enjoy immediately!
