Quick cuisine: Ajvar Salmon

I love nothing more than being able to use an ingredient in more than one way. This recipe makes use of ajvar, a red pepper dip/spread used throughout the Balkans. One pan in the oven - you could also do this with a different white fish or chicken if salmon is not your thing. The beauty of ajvar is that it is already packed with lots of flavor, so everything comes together quickly. Enjoy!

Ingredients

  • Four tablespoons ajvar (spicy or not - your choice!)

  • One cup of chopped vegetables - you could use broccoli, cauliflour, asparagus, or some pre-cooked potatoes

  • One 5oz/ 150 gram filet of salmon (or cod, or hake or chicken…)

  • olive oil

  • salt + pepper

Directions

Preheat oven to 175C/350F. Place the ajvar in the middle of the oven proof dish or pan. Place the salmon in the ajvar. Place the vegetables around the salmon. Season with salt, pepper and olive oil. Bake for 20 min. Done.
