Copycat Comfort: Red Lobster Biscuits

Red Lobster is an American chain restaurant known for seafood. I would get so excited when I was little when it was a Red Lobster Friday. I still get excited actually. I feel like people go to Red Lobster for two things: fried shrimp and these magical biscuits that basically fill you up before your meal arrives! They are buttery, flakey, cheesy and garlicky. It will just fix any of your life woes. And the house will smell amazing. Here is my version based on a few others I found online. Buttermilk is not a thing in Italy so I used Kefir. These pair well with a meal, but you can also just have a pile of these with a glass of red wine and call it day. Enjoy!

Ingredients

Biscuits

  • 2 1/2 cups/70 grams of all purpose flour or bisquick

  • 1 Tablespoon sugar

  • 1 Tablespoon baking powder

  • 1 Tablespoon garlic powder

  • 1/2 teaspoon Old Bay Seasoning (or 1/4 teaspoon cayenne + 1/4 teaspoon paprika)

  • 1 cup of Kefir (or 1 cup buttermilk or 1 cup whole milk + 2 Tablespoons lemon juice)

  • 1/2 cup/100 grams of salted butter at room temperature (or 1/2 cup unsalted + a big pinch of salt)

  • 1 cup/80 grams shredded cheddar cheese

Topping

  • 2 Tablespoons butter

  • 1/2 Tablespoon dried parsley

  • 1/4 teaspoon garlic powder (or one big clove smashed)

Directions

Mix together all of the dry ingredients. Then add the kefir and butter at the same time and mix until crumbly. This mix should be on the dry side - if it is soupy, add more flour a tablespoon at time. Then add the cheese and mix through. The butter needs to be evenly distributed in the mix or it won’t be a biscuit, it just gets a funny texture. Put in the fridge for one hour.

Preheat the oven to 200C/400 F. Use parchement paper on a baking tray and remove the dough and let it sit out for ten minutes. Meanwhile prepare the butter topping, by combining the butter, parsley and garlic powder and melting in the microwave(or stovetop) and and set aside. If the dough is a bit cold, you get cripsy biscuits! Scoop out biscuits to about 2-3 Tablespoons for each biscuit. I use a small ice cream scoop. Place in the oven for 12-15 minutes. Once they start to get a bit golden all around, they are ready! Brush with the melted butter mix and serve immediately. Enjoy!
