Weeknight Wonder: Pistachio Crusted Salmon

Sometimes you just want something a little special for lunch or dinner…but maybe you don’t want to go out. This salmon recipe is my go-to when I feel like this (lazy but craving culinary luxury…). It works well with pistachios or peanuts and can easily be doubled. When I bake the salmon I will usually throw in some vegetables on the side and this one sheet dinner is done in 30 minutes.

Ingredients:

  • one fillet of salmon (125 grams/4.5 oz)

  • two Tablespoons of pistachio or peanuts (crushed or not, your choice)

  • one teaspoon olive oil

  • one pinch of garlic powder or 1/2 clove garlic chopped

  • one teaspoon honey

  • one teaspoon dijon mustard (any dijon will do: with grains, herbs, plain)

  • one teaspoon balsamic vinegar

  • salt + pepper to season

Directions

Preheat the oven to 180C/360 F. In a baking sheet, add a little olive oil where the salmon will be or put down a piece of alumnium foil so it won’t stick. Next salt and pepper the salmon and lay in the baking sheet. Mix the rest of the ingredients in a bowl and then gently lay over the top of the salmon*. Bake for 20 minutes. Done.

*Since the oven is already going, you can add broccoli, red pepper, cherry tomato, carrot or pre-cooked potato in the baking dish with some olive oil. Every thing done at once :)
