Quick Cuisine: Kale, White Bean and Sausage Stir Fry

Fall flavors are here! I like to make this dish when kale is in season and abundant in Rome. This dish works as a side dish or in my case, a fast lunch. It’s cheap, tasty, relatively healthy and quickly cooked in one pan - what more could you ask? The leftovers can easily be tossed into a soup. This recipe is on heavy rotation in my house this time of year. Enjoy!

Ingredients

  • Olive Oil

  • One uncooked sausage link (you can use a spicy one if you like)

  • One garlic clove, cut in half stem removed

  • One 400 ml/8 oz can of white beans, rinsed

  • Three Cups/85 grams of chopped kale

Directions

Take the casing off the sausage and break up into pieces as it cooks on medium high heat. Once it starts to brown, add one Tablespoon of olive oil, the beans and the garlic clove and stir. Cover for one min covered and add the kale. Lower the heat and cover, allowing the kale to wilt and become dark green. After 3-5 minutes, toss everything and finish with another Tablespoon of olive oil. Before serving, you may want to remove the garlic cloves! Done.
