Banana Oatmeal Pancakes for One

 

I love pancakes – but I don’t need a stack of 10 when its just me, myself and I.

I also like bananas – and in lieu of making a loaf of “I don’t want to throw my sad bananas away” banana bread – these pancakes are quick and tasty!

Makes 3 fluffy pancakes

  • One banana

  • One egg

  • ¼ cup of oats (you can keep whole or blend them to a flour if you like for a smoother look)

  • ½ teaspoon vanilla extract

  • ½ teaspoon baking soda

  • ½ teaspoon sugar (optional - brown sugar is also lovely!)

  • pinch of cinnamon

  • pinch of salt

Mash the banana and add the egg and vanilla extract – whisk with a fork and let it get a little fluffy. Then add the dry ingredients and mix.

If you are using whole oats then let the mixture sit for a couple minutes so the oats absorb the liquid.

Cook 3 tablespoons of the batter on a hot pan that has been oiled or buttered. When you flip, its much softer than a regular pancake so you want to keep them small – don’t try and make one big pancake or you can’t really flip it(trust me!) and it’s a mess. 3 minutes on each side should do.

I like to serve with syrup or honey and some walnuts. Enjoy!
